A beautiful light, refreshing lunch dish. Please aim to buy wild caught salmon as the farmed fish is full of artificial feed and fish farms also add to pollution of the sea.
- 2 medium zucchinis
- 1 lemon
- half a bunch of dill
- Extra Virgin Olive Oil
- 150-200g wild caught smoked salmon
- 1 ripe avocado
- toasted pine nuts or almonds, optional
Best results with a zucchini spiral or a mandolin.
Chop the end bits of the zucchini and either slice along mandolin to achieve spaghetti cut or put the zucchini through the spiral. Add into a bowl and sprinkle with some sea salt. Set aside.
Mash the avocado with a fork or puree with a stick blender until smooth with the juice and zest of the lemon. Add salt & pepper to taste.
Toast the pine nuts or almonds in a pan until golden brown. Allow to cool completely.
Add the avocado puree to the pasta and gently mix through. Stir in the dill and salmon (torn in little pieces).
Drizzle with extra olive oil and enjoy.
