This is truly addictive. I recently went through a phase where I wanted to eat it every night (and pretty much did). I couldn’t get over how amazing it is. A lot of the Chocolate Mousses I see are full of dates or nuts (which isn’t really belly friendly). So I just invented my own.
Ingredients: Serves 2 (or one very cheeky one)
- 1.5 ripe avocados (we’re so blessed up in Byron to have the most amazing, creamy avo’s)
- 2 tbsp coconut oil
- flesh of 1 green coconut (and a splash of coconut water)
- 2 tbsp raw honey (we get ours straight from the hive and pour it in big jars which we fill with a few vanilla beans to get beautifully scented honey) or rice malt syrup
- pinch of salt
- 1 tbsp mesquite
- 3-5 tbsp raw cacao (depending on how much chocolate you like)
Place all the ingredients in a high speed blender and blend until very smooth. Spoon into pretty jars and place in fridge for 20min. When ready to serve top with a few raspberries or blueberries and some cacao nibs or some good quality raw chocolate.
