This one we pretty much have every day because it is so delicious!
Don’t be scared of the raw egg yolk. As long as you use fresh organic eggs it’s totally fine and nutritious. The yolk contains a huge amount of enzymes & vitamins and is definitely a true superfood (especially when eaten raw). You can leave the egg yolk out (but the dressing won’t be as good).
Ingredients:
- 1 tsp Alive Mustard
- pinch of himalayan rock salt
- cracked pepper
- 3 tbsp apple cider vinegar
- 2 tbsp sauerkraut juice
- 1 raw egg yolk, optional
- 100ml extra virgin olive oil
In a small jar add the mustard with the vinegar and kraut juice. With a fork mix well. The add the egg yolk, salt and pepper. Give it a good whisk until the yolk is well incorporated. Keep whisking as you slowly pour in the oil to emulsify the mixture. If it is too thick you can always add a little splash of water until you have your desired consistency.
This is great as a salad dressing or drizzled over steamed greens or over a steak or lamb.
