We know greens are super. A true superfood! We don’t have to spend hundreds of dollars on a powder. We can just buy some broccoli. Or spinach. Or kale. I always try to add some ‘green’ to every meal, cooked or raw or both.
I’m totally crazy about rocket leaves with a french style dressing made with our Alive Mustard at the moment.
With the warmer weather, my body is adjusting and I’m craving more cooling, refreshing foods. I often simply slice some raw vegetables such as carrots, cucumber, zucchini etc and eat it with our Alive Cashew, some sauerkraut & avocado. Simple. The other day I had plenty of broccoli in the fridge so I created this super healthy pesto/dip.
It goes so well for dipping your veggies in. But it’s also great over zucchini pasta, with fish or in salad wraps. Because I’ve added some sauerkraut juice it means this dip will last longer. Happy days!
Ingredients (all organic):
1 head broccoli, chopped & steamed for 3-5 min
1 bunch spinach or silverbeet
handful of activated walnuts
dash of sauerkraut juice
hemp seeds (optional)
Add the broccoli & silverbeet to high speed blender or food processor. Top with other ingredients and process/blend until desired consistency.
Store in a jar or air tight container in the fridge for up to a week.
